Chunky Mango Muffins






My experi
ence with baking has been very limited. I have baked veg.puffs in 100's and a few store bought cake mixs. Not that i don't like baking, but if i need to bake a bread or cake, the use of egg puts me off. The only time i bought them was when a cousin thought me to make some protein power packed white egg omlette loaded with veggies, but got tired eating them and stopped buying eggs.

When i saw Nandita's Banana Bread, boy was i glad to see something with the ingredients i buy. Made them and liked it very much. With that in mind, i decided to bake some kind of a light cake, but truned it into muffins. Why Muffins, because i just picked up a muffin pan recently. Inbetween deciding on a cake or muffin, my cravings went to the mango i picked up at the grocery store. It is not close the mango we get in India like alphanso or panganapalli, but hey for a Mango Addict like me, it is pretty good. I go bananas aout anything mango:-)

The reciepe is very simple, throw the following items and bake them for 20 minutes :

1/2 cup - All purpose flour(A.P)
1 cup - Whole wheat flour(W.W)
1/2 Tsp - Baking Soda

1/2 Tsp - Baking Powder

1/2 stick - Butter(Melted)
1/2 cup - Sugar(I used both white and brown sugar)
2 Tsp - Milk
1/2 Tsp - Cardamom Powder
1/2 Cup- Diced Mango

~ Pre-heat oven to 375.
~ Mix all of the above ingredients to form a dough.
~ Grease the muffin pan with butter or cooking spray.
~ Fill in the dough in the cups.
~ Bake for 20 minutes.
~ Remove and dig in.


Verdict :
# The muffins tasted it very good, had the texture of bread which i enjoyed maybe because of larger amounts of W.W.
# The baked mango pieces tasted heaven.
# Dried cranberried would have added in some punch.

Lessons Learnt :
# I added 1/2 cup of brown sugar + 1/2 cup of white sugar. Felt it to be little extra sweet by myself(i tend to be more of sweeter personality both in terms of sugar intake as well the other).
# 1/2 of A.P = 1/2 of W.W would have worked better i would think. I had only 1/2 cup A.P.
